Cauliflower

Cauliflower
I made this as a side with the chicken wings.  Easy and good. 

  • One large head of cauliflower (try and make all the pieces the same size when you take it off the root)
  • 1/2 cup golden raisins
  • 1/2 cup pine nuts
  • 1/4 cup chicken broth
  • 1/4 cup panko ( or bread crumbs )

In a large frying pan, cover the bottom with olive oil.  When it get hot, toss in the cauliflower.  Saute.  I had way too much cauliflower in the pan so I tossed in some chicken broth and let it boil down to soften the cauliflower.  Once it had boiled away, I toss a little bit more olive oil and some kosher salt over the top and mixed.  When the cauliflower starts to get browned, toss in the raisins, pine nuts and panko.  I kept playing with the heat from high to medium heat through out the process.  Continue to mix until the raisins, panko and pine nuts are incorporated and the pine nuts get a little browned.  If you need more based on the size of the cauliflower, by all means.
