Chicken and Sausage

The next couple of nights I am going to try a few recipes out of the Ad Hoc cookbook.  Tonight was chicken and sausage.  Super easy.

One whole chicken cut in 8 pieces ( you can certainly buy the separate pieces but I like to do it this way )
3 Sweet Italian sausage
Roasted red and yellow peppers ( I bought a pre-made jar which had 2 of each in it )
Jar of beans of your choice (I added this to the recipe)

Keller believes in the brine.  I did not have time so I didn't and that is fine, believe me.

Preheat the oven to 350.

In a large dutch oven or deep frying pan ( one that can go in the oven ) cover the bottom with vegetable oil.  Heat.  I seasoned the chicken pieces with kosher salt and paprika.  Brown the thighs and legs.  About 4 minutes.  Add the sausages and brown.  The sausages take about 10 minutes.  Take out the thighs and legs and now add in the wings and breasts, all side down.  Brown and then take out. 

Drain the excess oil.  Put in the beans and peppers, the chicken, the sausages ( cut these in half now ) and put in the oven at 350 for about 35 minutes or until done. 

That's it.  I served on the side rice with a bit of saffron in it.  A hit.

    I cooked from the Ad Hoc cookbook tonight as well! I made the buttermilk fried chicken, and it was fabulous. I don’t deep fry food very often, and it was a little fussy with the brining and the dredging, but it was well worth it.http://bit.ly/fried-chickenAlso, Keller’s lemony chicken brine really does add another level of flavor. Give it a try when you have the time.
