peanut butter chocolate chip

We are going up to visit Jessica this weekend at school.  I asked her what she wanted us to bring…perhaps peanut butter or chocolate chip cookies?  The short answer was ya.  So I just combined the two.  This recipe couldn't be easier.  This is the doubled recipe from Clinton Street Baking Company.

Preheat to 325.

2 sticks unsalted butter

1 cup peanut butter ( smooth or chunky )

1 cup light brown sugar

1 cup granulated sugar

2 eggs

2 1/2 cups four

1 tsp baking power

1/2 tsp baking sode

1/2 tsp kosher salt

12 ounces semi-sweet chocolate chips

In a bowl with an electric mixture, beat the butter, peanut butter and sugar until fluffy.

Add the eggs and dry ingredients ( I put the dry ingredients in a bowl first and mixed with a whisk)

Roll the dough into a log (2 inches thick and 8 inches long or longer).  Use a serrated knife and cut to make 1" slices.

Put each piece on a cookie sheet covered with parchment paper.   Using a fork, push down the cookie one way and then across the other way (cross hatch design).  Sprinkle sugar over the top. 

Bake for about 15-18 minutes or until browned.  Yum.
