Corn Salad

Corn is just abundant in the summer and it tastes so good.  By September I have had enough corn for the year because I think we eat is every night in August. 

Here are two easy corn salads. 

Corn salad
6 grilled corn with the kernels taken off the cob

2 limes for the juice and grated rind

a few pinches of grounded spicy red pepper flakes

1/4 cup of a really good olive oil

1 cup of grated manchengo cheese. 

Mix together. 

Another corn salad
6 grilled corn with the kernels taken off the cob

2 avocados sliced into chunky pieces

1 pint of cherry tomatoes sliced in half

2 limes for juice

1 tbsp honey

3 tbsp olive oil 

Mix together the honey, lime juice and olive oil for the dressing.  Toss over the corn, avocados and tomatoes.  Use a little salt for taste and serve.
