Fabulous Fudge
Josh has become a foodie. He had dinner at Del Posto the other night and described his meal in detail. He loved the carving class he took in Thailand. Last night he came home with a recipe for Fabulous Fudge. He made it last night. It takes about 5 minutes and then patience while it gets cold. This is also a great recipe to do with kids ( he got it from his teacher ) and you can add whatever goodies you want like mini marshmallows, m & m’s, crushed peppermints, etc.
- 3 cups of chocolate chip (semi-sweet or milk chocolate – I used milk and the better the chocolate, the better the fudge)
- 1- 14 ounce can eagle brand sweetened condensed milk
- dash of kosher salt
- 1 1/2 tsp. vanilla
In a heavy saucepan, at medium heat, melt all the ingredients together. Once it is melted, add any goodies that you want at this point. Pour this into a 8 inch square pan that has been lined with wax paper. Chill in the frig for 2 hours, or stick in the freezer for about an hour. This recipe could easily be doubled.

Okay, so I tried it the other night…not only was it probably the easiest thing I’ve ever made (and I’m a dunce in the kitchen) but it was so yummy! I used semi-sweet Ghiradelli chips, but next time I think I’ll use milk chocolate.
