Coconut Chocolate Bites

CoconutThese couldn’t be easier to make.  They look good too although my picture is absolutely awful. 

1 1/2 cups unsweetened dried coconut
1/3 cup sweetened condensed milk
4 1/2 ounces bitter sweet chocolate  – finely chopped ( I might have used a little bit more )

Line a 9 by 9 metal baking pan (or 8 by 8 depending what you have) with wax paper.  Make sure the wax paper is about 2 inches more than the bottom so the paper overlaps.  My pan was deep so the wax paper just creeps up the sides to the top.

Mix together the coconut and the condensed milk with your fingertips.  Press this mixture firmly over the wax paper and evenly.  You really need your fingers to do this right.  Chill for about 5 minutes in the refrigerator.

Melt the chocolate at a low heat in a small saucepan.  Spread the chocolate evenly over the coconut and spread with a spatula.  Chill for another 5-10 minutes or until completely firm.

Lift the bites out of the pan onto a cutting board.  Cut the ends evenly.  Cut evenly across to create one inch pieces.  Cut horizontally and diagonally creating small one inch squares.  Now layer one piece on the other making a little sandwich. 

Chill covered until ready to serve.  You can serve them on a plate or even in small candy wrappers (like tiny cupcake holders).   We decided that you either love or hate coconut, it is one of those flavors.  If you like coconut, these are a total treat.
