Chocolate Cookies with Chocolate Chunks and Peanut Butter Chips
Visiting Day is coming up. We are pretty busy this week (thank god) so Emily decided today was the day to make the cookies. She was the chef. She made a round of our chocolate chips and made a batch of chocolate chocolate cookies with peanut butter.
These cookies are fantastic. Gooey and rich like a miniature brownie.
2 sticks unsalted butter
1 cup light brown sugar
1 cup white sugar
2 tsp. vanilla
3/4 cup unsweetened cocoa
2 cups flour
1 tsp. baking soda
1 tsp. kosher salt
1 bag of peanut butter chips
1 bag of semi-sweet chocolate chunks
Preheat the oven to 350. Cream the butter until really fluffy, add in the sugars until completely mixed. Add the vanilla, then the eggs, one at a time. Add the cocoa and mix. Sift together the flour, baking soda and salt. Add this mixture to the chocolate mixture on a low speed and until just combined. Then add in the chips and combine. I use the mix master to mix in the chips, quickly.
On a lined parchment paper cookie sheet, drop about one tablespoon for each cookie on the sheet. Flatten out the cookies a bit before you put them in the oven. About 15 minutes in the oven.
