banana peanut butter chocolate chip cookies

I always find it hard to let those very ripe bananas get tossed in can.  Banana bread again?  Cookies seemed to be the call.  These are different and delicious. 

1 cup unsalted butter (room temperature)
2 cups light brown sugar
1 cup granulated sugar
1 1/2 cups peanut butter (I went with the extra crunchy)
3 ripe bananas
1 tsp. kosher salt
1/2 tsp baking powder
2 1/2 cups flour
Large bag of semi-sweet or milk chocolate chips (optional)

Preheat oven to 350.

Cream together the butter and both sugars until creamy.  Add the peanut butter and the bananas, mix well.  Add the salt, baking powder and flour ( you should mix them together before hand ).   Add the chocolate chips, mix again.

Use about one tablespoon per cookie, on a parchment link cookie sheet.  Bake until browned.  They really should be browned or they won't be done.  About 13 minutes or so but each oven is a tad different.

Enjoy…unfortunately I still have 3 ripe bananas left so I might have to come up with another plan.

    I have never thought of using bananas in cookies. They certainly look delicious! I will definitely give them a try.

      banana with fish is also nice a layer of pre cooked fish a layer of yam sliced thin and pre cooked then banana on top topped with brown sugar and maple syrup enjoy

    Loved the recipe. Next time I’m going to use at least 1/4 cup more peanut butter and extra banana. There wasn’t enought banana flavor for me!

      I like the extra pop of peanut butter. Good idea. For me, it is allrelative to how many rotten bananas are staring at me in the face.
