oatmeal golden raisin cranberry cookies
Got this recipe off of lisi's luscious desserts for oatmeal raisin cookies. chewy, tasty, buttery and just plain delicious. made a huge batch an added dried cranberries to the mix.
2 cups butter, softened
2 cups white sugar
1 cup light brown sugar
2 teaspoons vanilla
2 large eggs
3 cups all purpose flour
2 teaspoons baking soda
2 1/2 teaspoons cinnamon
1 teaspoon kosher salt
3 cups rolled oats (not quick)
1 cup golden raisins
1 cup dried cranberries
Preheat oven to 350.
In a mix master, with a paddle attachment, mix together butter, white sugar, brown sugar and vanilla. Mix really well until creamy. Add the eggs, one at a time, mixing between each egg. Put the flour, baking soda, cinnamon and salt in a separate bowl and either sift or use a fork and mix well. Add to the sugar/butter mixture. Mix well.
Add the oats, cranberries and raisins. Mix at a very low speed until mixed together. Bake for about 10-12 minutes on lined parchment paper cookie sheet.
Voila.

I made these cookies and I reduced butter to 1 cup and white sugar and brown by half. I also added plain lowfat yoghurt. The cookies are delicious. I have a photoJudy

Just made these delicious cookies! Judy, we used your 1cup sugar and l/fat yoghurt approach! Really, really great! Even the kids loved them!
