Lemon-Poppy Seed Crisps
We are having a dinner party later this week and I am starting to get ready. Today was dessert day. This is one thing I made. Others coming. I got this out of Martha Stewart's Cookie book.
1/4 cup fresh lemon juice
2 sticks unsalted butter
2 cup flours
1 tsp. baking powder
1/2 tsp. kosher salt
1 1/2 cups sugar
1 large egg
2 tsp. vanilla extract
4 1/2 tsp. grated lemon zest
1 tbsp poppy seeds plus more for sprinkling
Preheat the oven to 350. Put the lemon juice in a small saucepan and bring to a boil. Reduce by half. Then add in one stick of butter and stir until melted.
Whisk together the flour, baking powder and salt. In mix-master with a paddle attachment, put in the other stick of butter and 1 cup of sugar. Turn on to medium speed and let mix until pale (about 3 minutes). Mix in the vanilla and 3 1/2 tsp lemon zest. Reduce the speed to low and mix in the flour and 1 tbsp. poppy seeds.
In a small bowl put 1/2 cup sugar and 1 tsp. lemon zest and mix. Take the cookie dough and roll 1 1/4 inch balls. Roll them in the sugar/lemon mixture. Place on a cookie sheet lined with parchment paper. Take a glass and put the bottom in the sugar mixture and then put the balls down until flattened (1/4 inch thick). Sprinkle some poppy seeds over the top.
Bake until browned around the edges. 12 minutes.
