ad hoc brownies

Brownie
I have made these a few times.  They are awesome.  Cut them small because they are rich and decadent.

3/4 cup flour

1 cup unsweetened cocoa powder

1 tsp. kosher salt

3 sticks unsalted butter (cut up into small pieces)

3 large eggs

1 3/4 cup granulated sugar

2 tsp. vanilla

8 ounces chocolate chips (preferably bittersweet 60% chocolate)

Preheat oven to 350.  Use a 9 X 9 inch square baking dish.  Make sure you really butter the dish.  I even put parchment paper on the bottom.

Sift together the flour, cocoa powder and salt.  Set aside.

Melt half the butter in a small pan.  Pour the melted over the butter over the chopped up pieces of butter.

In a mixing bowl beat the eggs and sugar together for at least 3 minutes.  This mixture should get really pale.  Longer is better than shorter.  Then add in the vanilla and mix again. 

On a low speed add in the dry mixture then the wet mixture alternating about three times. 

When this is complete put in the chips.  Pour in to the container and bake for about 45 minutes.

    I love those brownies. Probably the only time I’ve ever eaten something with 3 stick of butter and not felt guilty one bit. They are worth every bite.
