a winter salad
I might have gone a little overboard on this salad but I just kept adding. The mixture of warm vegetables mixed with greens and cheese works for the winter. You can put in more or take out some of the ingredients but the concept is here.
Mixed Greens ( on the bottom )
1 cup cooked farro
Pan fried Brussel sprouts
Roasted acorn squash (small pieces)
Shaved goat Gouda
Poached chicken breasts
Pan fried Broccolini
Put all of this in a bowl, mix it up, toss on some olive oil and balsamic vinegar and a little kosher salt and pepper for taste. Serve. Nice for a lunch or to break up the week day dinners.

My kind of salad. Yum!!
looks delicious! did a similar hot/cold salad for lunch today. heated soy beans, snaps, wild rice with chopped cranberries. Then added tuna, wild rocket and dressing cold, mixed. All this in the office today, such a good time to experiment with salads.
