Emily is baking up a storm

Cookies
Emily has really been into baking these days.  She made these cookies this weekend and they were amazing.  The recipe came from 101 Cookbooks and they are called Nikki's Healthy Cookies.

3 large, ripe bananas, well mashed (about 1 1/2 cups)
1 teaspoon vanilla extract
1/4 cup olive oil
2 cups rolled oats
2/3 cup almond meal
1/3 cup coconut, finely shredded & unsweetened
1/2 teaspoon cinnamon
1/2 teaspoon fine grain sea salt
1 teaspoon baking powder
6 – 7 ounces chocolate chips

Preheat oven to 350.  Combine bananas (1 1/2 cups), vanilla and oil in one bowl and set aside.  In another bowl combine oats, almond meal, shredded coconut, cinnamon, salt and baking powder.  Mix the dry with the wet ingredients.  Dollop about a small tablespoon, an inch apart, on to a cookie sheet lined with parchment paper.  Bake from 12-15 minutes depending on your oven.  The cookies should be just browned.

Really good!

I really enjoy this blog and read it mainly from the perspective of a young woman starting out in business, but I’m also a foodie so it combines all my loves in one read! Thanks in particular for sharing this recipe – my business partner adheres to a vegan/gluten-free diet so this is perfect for her and I’m going to make a batch to keep us going during a big strategy day we have planned next week (with pure dark choc chips of course:)
