Chorizo Calamari Tacos
Chorizo basically goes with everything. I am finding myself uninspired these days in the cooking department. I asked Josh what he wanted for dinner, his answer was classic…a good meal. OK, so not a steak thrown on the grill, not a roasted chicken but something creative. Hmmm.
I came up with this and not only was it a winner, it was simple and quick.
4 large pieces of chorizo cut into pieces
1 1/2 lbs of calamari cut into 1/4" pieces
celery sliced at an angle
red pepper flakes
guacamole (3 mashed avocados, 1 large tomato chopped, 1 huge shallot chopped, 1/2 lemon squeezed, shot of hot sauce, kosher salt )
sliced of fresh mango
flour tortillas
cilantro leaves
In a deep frying pan, brown the chorizo and then take it out of the pan with the grease. Add a little bit of olive oil to the pot and toss in the calamari and sprinkle with red pepper flakes and some kosher salt. Fry it up until crispy. Add the celery and chorizo back into the pot and fully incorporate.
Serve in a flour tortilla, put a little guacamole over the top, hot sauce and piece of cilantro. Just before you roll up the taco add a few slices of mango.
Simple. Could easily serve this as an appetizer for a dinner party too.

I will definitely be making these, they look outstanding. The meat/fish combination is my weakness.
