Oatmeal cookies

Oatmeal
Am working the April Bloomfield cookbook.  I made these cookies over the weekend. 

1/4 cup golden raisins

1/4 cup currants

10 tbsp. unsalted butter (room temperature)

1 cup light brown sugar

2 eggs

1 cup flour

1/2 tsp. baking soda

1/2 tsp. cinnamon

big pinch of kosher salt

2 tsp. vanilla

2 cup old fashioned oats

Preheat oven to 350.  In a small bowl put the golden raisins and currants, pour hot water over the top and let sit. 

Beat together the butter and brown sugar.  Add in the eggs.  In a small bowl mix together the flour, baking soda, cinnamon and salt.  Incorporate the dry mixture into the wet mixture including the vanilla and beat thoroughly.  Strain the raisins and currants.  Add in the oats, raisins and currants to the mixture and beat again.  Once everything is mixed together cover the bowl with saran wrap and put in the refrigerator for an hour.

On a parchment paper covered cookie sheet drop the cookies about 2-3 tbsp. in size.  Bake until golden.  Serve hot out of the oven.
