Oatmeal Cookies for the week
Every Sunday I make a big batch of cookies. They last about a week sometimes a little more. My standard is the chocolate chip. I can pretty much make them in my sleep. Today I opted for oatmeal cookies just to shake things up.
These are chewy, buttery and quite delish. This is a recipe for about 60 cookies.
Preheat the oven to 350.
4 sticks unsalted butter at room temperature
1 1/3 cups light brown sugar
1 1/3 cups dark brown sugar (you could just choose one but it is what I had and it worked)
4 eggs room temperature
3 cups all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. kosher salt
6 cups old fashioned oats
4 cups of chocolate chips or dried fruit (cranberries, raisins)
In a large mixing bowl cream together the butter and beat until smooth. Add brown sugar, eggs and vanilla and beat until incorporated. Whisk the flour, baking soda, cinnamon and salt in a separate bowl. I use a whisk. Add this into the other bowl and beat until incorporated. Then take the oats and chocolate or dried fruit and mix the rest in with a wooden spoon.
Put the bowl in the fridge for about 10/15 minutes to get cold. Scoop the cookies on to a parchment lined cookie sheet about two inches apart. Bake until browned about 10/12 minutes.

Just tried these using chocolate and cinnamon chips. With a cold glass of milk – holy moly, stress buster! (They won’t be lasting a week, that is for sure.)
