Sweet potato fries

potatoesI love the sweet potatoes.  I got this recipe on Food52.  Food52 has this great product where you can save the recipes you like under folders that you label.  I have been building one out called Summer.  It is easy to get lost in there.

On another note…I need to work on the photos of food this summer.

I used about 12 sweet potatoes.  Preheated the oven to 425.  I also made the dip that was recommended on the side.  It is key.

I cut them into small wedges.  Probably worth boiling them first and then sticking them in the oven.  They can bake quicker and get crisper but I did not.  It all worked out.

Take the small wedges and toss them in

1/4 cup paprika

1/4 cup chili powder

1/4 cup cumin

1 tbsp. salt

1 tbsp. pepper

Massive olive oil.

Lay them on a baking pan either covered with tin foil or parchment paper.  Roast until crisp.

2 cups sour cream

3 heaping tbsp. chopped cilantro

2 limes squeezed over the sour cream (about 3 tbsp.)

1 1/2 tbsp. sweet chili sauce

salt and pepper to taste.

Mix and serve along side the piping potatoes.  They go quick.

    LOVE! This might be favorite form of french fry. We have several places in Boulder that have awesome different versions.

    Last week I made blueberry cobbler and it was a hit….thanks! It’s so much easier to build a menu around even just one dish. So maybe we will have lobster rolls with sweet potato fries tomorrow. Thank you!

    Me too. Going to make some and use Lillie’s Ivory BBQ. It’s an Alabama BBQ sauce. Think smoke and mayo.

    Absolutely love these! Do your investments get occasional meals from you too? “value add” taken to a new level, and one I would approve of! But yes, those look very very delicious!

    Had a huge bash at Balaboosta last night and one of the many! small plates were these.Need to say that I still love this place years later. For family style groups of 12-15 it is a great spot with a terrific wine list.

        They were super.Guests of honor were my mom–96– and my son and his new bride.The braised cauliflower and hummus and farm-to-table food, and some astounding Portuguese, Israeli and Slovinian wine flowed. And flowed.Out of the restaurant into a small row of waiting cars on Mulberry. Perfection as evenings go.My mom and son will be talking about this for years to come.
