Happy Thanksgiving

pieThanksgiving is my all time favorite holiday of the year.  Getting ready for it is half the fun.  Enjoy the day, overeat, lounge on the couch and watch the parade….and of course cook.

If you are looking for a last minute recipe.  I made this pecan pie yesterday.  Went back to an old favorite cookbook, Stars Desserts by Emily Luchetti.  The book has been used so many times that the binder is falling apart.  A maple pecan pie…I adding a bit of bourbon to the mix.

4 large eggs

2/3 cup sugar

1/2 cup maple syrup

1/2 cup Karo syrup

3/4 stick sweet butter melted

12 ounces chopped and toasted pecans

2 tbsp. bourbon

1 partially baked 1- inch pie shell

Serve with ice cream or whipped cream.

Preheat the oven to 325.

Whisk together the eggs and sugar.  Stir in the maple and Karo syrup.  Add in the bourbon and butter.  Put the chopped pecans in the shell.  Pour this mixture over it.  Let the mixture sink in.  I slowly moved the pecans around to make sure it all seeped in.

Bake for 25 minutes or until the filling is just set.

    Beautiful looking pie, pecan is my fav! Love the maple leafs on there too, looks Canadian to me, and William agrees too. I’m in Toronto but wish you and your family, and every American a wonderful Thanksgiving day/weekend! My wife and I are leaving for our honeymoon tomorrow so we are hoping that there’s a turkey dinner waiting for us on our cruise ship in Fort Lauderdale 🙂

This year, 2 pork tenderloins w/ 2 different marinades; a cold spaghetti squash salad; spiralized zucchini w/ melted anchovies, garlic, crushed red pepper & oil; butternut squash & quinoa salad; kid friendly Caesar; Con Pane bread (if in San Diego, it’s the best.), Julian strawberry rhubarb pies & Pie Hole Pies….Hmmm…what else?? Double Dinner!
