Noodles and Greens Asian Style

We are all grasping for new meals to entertain us. This one was tossed together with what’s in the fridge. I had to post so I remember it!

I took all the beautiful bok choy that I got from my farm box and some other greens that go well with Asian based foods. Chopped it up. Grated ginger and chopped scallions. For good measure, I tossed in some red chili flakes for a bit of oomph.

In a big deep saute pan cover the bottom with Vegetable oil. Toss in the ginger, red chili flakes and scallions until soft and fragrant. Add in the greens and toss thoroughly until they are cooked. Now add soft Ramen noodles. If you don’t have soft Ramen noodles you could cook up some spaghetti on the side and use the done noodles. Combine completely.

Take 1/2 cup soy sauce, 1/2 cup chicken stock, 1 tbsp honey, 1 tbsp. rice wine vinegar, 1 tsp. sesame oil and salt to taste. Mix this together and add to the greens and noodles. Combine thoroughly and serve. I also through in a grilled pork chop on the side.
