Ziti and Cauliflower

This is so easy and so good.

One lb ziti, one head of cauliflower broken up into pieces, red pepper flakes, olive oil, chopped shallots, Parm cheese, panko.

In a large pot boil water and put in the cauliflower. Boil until soft. Take out the cauliflower but keep the water boiling. Add the ziti into the same pot.

Let the cauliflower cool a bit and chop into small pieces.

In a small frying pan cover the bottom with olive oil and toss in 1 cup of panko. Saute until the panko (or bread crumbs) is browned.

In a deep frying pan saute the shallots until almost golden and add 1 tsp. of red pepper flakes and mix. Add the cauliflower and mix thoroughly.

When the ziti is done, put the pasta into the deep frying pan with the cauliflower and mix. Add a little bit of the water from the pot to soften up the mixture. Toss in the panko and thoroughly combine. Add as much cheese to your liking and serve.

We had it for dinner and then for lunch again the next day. Winner!
