Crabcakes

Once a week we go down to the beach and have dinner with our friends. It is one of my favorite nights of the week. The key here is finger food.

Crabcakes came to mind this week. I love a good crabcake and a good crabcake is not easy to come by. I remembered that a friend had made them at his dinner party and he emailed the recipe. A family recipe his Mom still makes. I found the recipe, the email was from back in 2012. They are so good.

  • 1 pound jumbo lump crab meat
  • 1/2 cup Hellman’s mayo – heavy-handed
  • 1 egg yolk
  • 1 tsp dry mustard
  • 2 tbsp. melted butter
  • 1 tsp old bay
  • 1/2 fresh squeeze lemon
  • salt and pepper
  • few splashes of Worcestershire sauce
  • 1/2 package of saltine crackers crushed in a ziplock bag

I doubled this recipe with no problems.

Put ingredients in a small to medium bowl…. mix together with spoon…..add crabmeat and gently mix with your hands so you don’t break up the meat too much….add enough saltines to form together…..gently make into patties (whatever size you want)….put on cookie sheet….Preheated oven 400 degrees…..bake until slightly brown….about 10-12 minutes…then throw on the broiler for 2-3 minutes to get a nice brown top.

Serve them hot or at room temperature. These are a winner.
