Banana Crumble Muffins
These are worth making sure to buy extra bananas at the store and letting a few of them just get black. The recipe doesn’t make many (12) but I have been making small amounts, gobbling them up and then moving on to the next baked item.
Preheat the oven to 375.
Batter:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 bananas, mashed (about 1 1/2 cups)
- 3/4 cup white sugar
- 1 egg, lightly beaten
- 1/3 cup butter, melted
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Topping:
- 1/2 cup packed brown sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 2 tablespoons butter
Use a regular muffin pan, the line with muffin papers.
With a whisk mix together flour, baking powder, baking soda and salt in a large bowl. In another bowl mash up the bananas, sugar, eggs, vanilla, cinnamon, nutmeg and melted butter. Spoon equally into the cups.
In a small bowl mix together the topping ingredients with your fingers. It should look like sand. Sprinkle equally over the muffins.
Bake for 15-20 minutes or until a toothpick comes out clean.
