Strawberry Spoon Pie

The picture does not give this dessert justice. I made it twice this week. It is easy, delicious, and served warm with a little vanilla ice cream….it is a serious win. Strawberries are in season and so good this year. You could probably make this with blueberries and peaches, too—another good recipe from the New York Times.

1 stick unsalted butter (room temperature and melted), 1 flowing cup of strawberries, 2/3 cup light brown sugar, 1/2 cup whole milk (I used 2%), 1 tsp. kosher salt, 1 cup flour, 1 tsp. baking powder.

Heat oven to 350. Grease an 8 inch baking pan.

In a small bowl, mash the strawberries with a fork and add 1/3 cup of brown sugar. Set aside.

In a medium bowl, whisk together the butter (melted), remaining 1/3 cup sugar, milk, and salt. Add the flour and baking powder and whisk until smooth.

Spread this evenly in the baking pan. Pour the strawberries evenly on top. Bake for 20-25 minutes. Voila!

I made it in the afternoon and reheated it before dessert. Served it over two scoops of vanilla ice cream—kind of a perfect summer dessert.
