Lamb Burger
Alice Bloomfields lamb burger at the Breslin is really one of the most incredibly burgers. My attempts to recreate it were not bad but going there is a whole entirely different experience. I think April is one of the most incredible chefs out there.
For three burgers I used one and a half lbs of ground lamb. Salted the meat and made three patties. Grill until done to your likeness.
Mayonnaise: 3 egg yolks, 1 tbsp. dijon mustard, 1 tbsp. red wine vinegar, 1 tsp. cumin. Mix this in a blender and then add about 1+ cup to it while the blender is going. Taste and if it needs a little more oil, then add another 1/4 to 1/2 cup. Once done, take 1 lemon and squeeze in the juice and stir.
One large Vidalia onion, toss with kosher salt and olive oil and grill until browned.
Large slice of feta cheese ( I prefer French feta )
A simple bun ( i used too big a one but that is all they had at the store ). Brush with olive oil and grill.
Burger, mayonnaise, onion, slice of feta in the bun and serve. Nice change of pace and quite tasty!

I love lamb burgers! Looks delicious!A great variation of this is to substitute the mayo for tzatziki (with mint) and add a roasted red pepper.
