split green pea soup
I can't remember the last time I made split green pea soup but for some reason I had to make it yesterday. Maybe because I have a terrible hacking cough, pink eye and basically feel like shit. So not pretty.
2 cups of split green peas – make sure to soak them first while you prep the rest (it does make a difference)
2 large onions chopped
5 large carrots diced
5 celery sticks diced
12 cups chicken broth
2 large ham hocks
in a small spice bag – 2 bay leaves, 1/2 tsp. thyme, 1/2 tsp. oregano, 10 peppercorns
kosher salt
In a large pot cover the bottom with olive oil. When it gets hot put in the onions, carrots and celery. Saute until soft. About 10/15 minutes. Add the spice bag and saute for another few minutes. Add the split peas and saute for another minute. Put in about 1/2 tsp. kosher salt and mix. Add the ham hocks on top and then pour in the all the chicken broth. Crank up the heat to high until the soup begins to boil and then take it down to simmer. Cover the pot and once in a while check it but this basically hangs out on the stove for about 2/12- 3 hours.
Once it is done take out the ham hocks and pull off the ham (get rid of the fat) and chop into small pieces. Put that back into the soup. Salt and pepper for taste. Serve
I serve this with a baguette topped with gruyere broiled in the oven. A nice warm dish for a really cold night.

I hope you feel better soon! If the soup and bread/gruyere don’t work, a good whiskey hot toddy will often do the trick…but probably not on a Sunday morning.

I made chicken soup on Saturday . It is the cold weather. Something warm and nourishing. My friend makes split pea soup for me. He takes the soup and puts it outside to gel inorder to skim off the fat and then delivers it to my house.I must try your recipe. sounds easy and so good…. The best thing would be for you to have someone else cook and you should sit in bed getting well for a change.
i have not left the house in two days. starting to feel human again!

Sounds delicious (the soup – your illness sounds terrible).Here’s an easy and delicious sweet potato soup:> olive oil in the bottom of a large soup pot> lightly brown 1 large diced onion and 4 minced cloves of garlic on medium heat> add 4-6 diced sweet potatoes (skin-on), 2 quarts vegetable stock, 1 quart sweet potato soup base (I use Imagine brand from whole foods)> add 2 tablespoons rosemary, 1 tablespoon cumin, 1 tablespoon curry and salt to taste.> let simmer on low flame for at least 75 minutes> about 40 minutes before serving (sooner if you like rice well-cooked), add 1/2 cup brown jasmine (or other) rice> use potato masher and gently mash less than half the sweet potatoes and leave the rest unmashed> serve lightly salted with generous fresh black pepperNote: if you’re unhappy with consistency, 20 minutes before serving you can add canned sweet potato puree and/or more vegetable stock to get the consistency you preferEnjoy!-Mark Gavagan

I had pinkeye a week before I was scheduled to have my second baby a year ago. Come to find out it was a sinus infection–everything is connected up there after all. Eww! Hope you feel better soon!
