Sweet and Sour Cabbage Soup

SoupIt’s cold and miserable outside.  Soup time.  I got this recipe years ago from a woman who worked for me.  I make it once a year.  Today was the day.

You need quite a large soup pot. 

6 – 7 beef short ribs

Put the ribs in, pour in water to barely cover the bones.  Bring to a boil and skim the top.

Add…
3  1 lb. 12 ounce cans of crushed tomatoes
2 lemons (squeezed for the juice)
1/2 cup sugar (you can always add more if you like it a bit sweeter)
4 spanish onions sliced very thin
1 large head of green cabbage, sliced thin
1 tsp of kosher salt

Mix together, cook over a medium heat for 1 1/2- 2 hours or until the meat is really tender.  Cover the pot.  Then take the meat off the bones, or just search for the bones in the soup and take it out.  Cut up the meat into bite sized pieces and return to the pot.  Serve with bread for sopping.  I prefer sour dough.

    Would you have a fabulous recipe for brisket? My Mom cooked it on top of the stove in a heavy covered pan with carrots and potatoes but I can’t find the exact recipe. Do you know of a similar one?
