a new twist on tacos

Tacos spread
Everyone wanted tacos but I wanted to make something different.  Here is what I came up with.

Salsa:  grilled corn, sliced cherry tomatoes, lots of cilantro, fresh lime juice and grapeseed oil, salt

Sliced Avocados

Grilled chickens.  Once they were slightly cooled, I pulled off all the meat

Sauce:  Sour Cream, Chipolte sauce, Sriracha sauce, fresh squeeze lime juice and salt

Large warm flour tortillas. 

One taco
A nice twist and so good.  Makes for good leftovers too!

    Looks fantastic, did you roast the tomatoes too? A little time on the grill can work wonders. Another sauce trick for a twist: get a little can of chipotle peppers in adobo sauce, and mince one or two up with sour cream and some of their sauce to taste. Smokey, spicy, creamy, and delicious!

      i like the idea of a can of chipolte peppers. didn’t put the tomatoes onthe grill but obv could.

    you are so much into food….have you ever thought of living for a wile with an italian nunny in the country side and get all her tricks.I am sure you would love it.I love to eat and good food but I hate cooking so not for me 🙂

    I was sitting here wondering how you were able to grill the corn. Wouldn’t all the little kernels fall between the grates?After a moment it dawned on me that you grilled the entire cob of corn. I think I need to get more sleep.BTW, here http://urbanext.illinois.ed… is a great reference for choosing, growing and preparing all kinds of vegetables (I have no connection with the site).
