Almond Cranberry Oatmeal Maple Scones
I've never made scones before, this is a first. Couldn't be easier and so good.
1 1/2 cups flour
1 1/4 cups oats (old fashioned)
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. kosher salt
1/2 cup sliced almonds
1/2 cup dried cranberries
1 stick butter, cold cut into 10 pieces
1/3 cup heavy cream
1/2 cup maple syrup
1 cold egg
Maple Glaze:
1 cup confectioners sugar
3 tbsp. maple syrup
2 tbsp. water
Mix all the glaze ingredients together. It should be able to pour.
Preheat oven to 350.
Using a standing mixer with a paddle attachment mix together the flour, oats, salt, baking powder, baking soda, almonds and cranberries. Scatter the butter on top and mix again until the butter is broken into small little pieces.
In a small bowl whisk together the cream, maple syrup and egg. Add this to the mixture and beat.
Using a spatula make sure this is all mixed up. Take a 1/3 measuring cup and fill it with the batter and and scoop on to a parchment paper lined cookie sheet. This made about 10 scones.
Bake for about 25 minutes or until browned.
Let cool and then pour the glave on top. Serve.
